Chicken Tortilla Casserole
Ingredients:
3 boneless, skinless chicken breasts cooked and torn into pieces
1/2 onion, chopped
1/2 stick butter
12 corn tortillas
3 cans cream of chicken soup
8 oz. shredded cheddar cheese
8 oz. sour cream
Small can of diced green chilies
Prep:
-boil water in pot and add chicken
-remove chicken and tear into pieces
-cut 12 corn tortillas into pieces
-saute onion in butter
-add cream of chicken, green chilies, onion, chicken, and cheese in bowl and stir
-add corn tortillas and sour cream and spread into 9x13" pan
-bake at 325 to 250 degrees for 25 minutes
-remove from oven and enjoy!

Do you think I could throw the chicken, onion, maybe one of the cans of c.m. soup in a crock pot with some chicken stock or water in the morning so it's shredded by night? I'm always looking to save time but I don't want to mess the recipe up because it looks SO good!!

When you eat it, you just really taste the corn from the tortillas. It gives it that authentic Mexican dish taste without all the spice.
