Pecan Crusted Salmon with Mango Salsa
Mango Salsa
Ingredients:
2 mangoes
1/2 cup red onion, small diced
1 finely diced pablano pepper
1 teaspoon orange zest
1 shot orange juice
1 shot red wine vinegar
1 red bell pepper, diced
1 bunch cilantro, chopped
-peel mango and cube
-place in mixing bowl
-dice onion
-add with mango
-finely dice pablano pepper
-add to bowl
-dice red pepper
-add to bowl
-zest orange
-add to bowl
-juice orange
-add to bowl
-chop cilantro
-add to bowl
-add red wine
-stir, let sit 1 to 2 hours
Pecan Crusted Salmon
pre heat oven to 450 degrees
Ingredients:
4 salmon fillets
2 cups pecans
1 clove garlic
1/2 teaspoon salt
1/4 teaspoon cayenne
1/2 cup extra virgin olive oil
-chop pecans
-mince garlic
-measure out cayenne
-place in bowl with pecans and mix
-measure out olive oil
-place in separate bowl
-dip fillets in oil and roll in the pecan crumb mixture
-heat large skillet and lightly saute salmon on one side
-turn onto a sheet pan and bake fish in oven for 4-5 minutes or until done to taste
Salad Greens
Ingredients:
1 bag mesclun mix greens
1 teaspoon olive oil
1 teaspoon balsamic vinegar
pinch of salt
-toss greens with oil, balsamic, and salt
-place on middle of plate
-place salmon on top of greens
-top with mango salsa

Looks like a complete delicious meal. I just love mango salsa. I can never decide if its relish or dessert! ;)
ReplyDeleteAwesome...I never make crusted anything because I am afraid that the crust will come off in the saute pan...the oil must be the trick, and baking the second side. Nice! I'm going to try an herb-crusted salmon now...
